Monkfish & Shrimp Pasta Portuguese Style: Quick and Tasty

Embark on a culinary adventure with this delectable monkfish pasta, tantalizing your taste buds with succulent shrimp, robust flavors of garlic, onion, and tomato, elevated by a splash of white wine, and garnished with parsley for a truly gourmet experience.

Ingredients

  • 1 Onion
  • 1 Large Tomato, roughly chopped
  • 2 Garlic Cloves, minced
  • 1 tbsp Olive Oil (preferably extra virgin)
  • Salt, to taste
  • Pepper, to taste
  • 200 grams Pasta (chunky pieces)
  • Parsley, chopped for garnish
  • 1/2 cup White Wine
  • 1/2 lb Monkfish, cleaned and cut into chunks
  • Shrimp (optional), pre-cooked and peeled

Instructions

  1. Mince garlic cloves, and cut up onion and tomato.
  2. Heat olive oil in a pan.
  3. Cook the onion and minced garlic for a few minutes.
  4. Add the cut up tomato to the pan.
  5. Pour white wine into the sauce mixture and let it reduce.
  6. Boil water in a pot and cook thick pasta according to package instructions.
  7. If you want a thicker sauce, you can add some of the pasta water when your pasta is done.
  8. Remove any skin and sinew from monkfish, cut into chunks.
  9. Add monkfish to the pan and cook for about 6 minutes.
  10. Add shrimp to the pan and cook for 2-4 minutes, depending on their size.
  11. Plate half of the cooked pasta for two servings, top with sauce, monkfish, and shrimp.
  12. Season with salt and pepper to taste, garnish with chopped parsley.
